Once seated, our waiter quickly explained to us how the menu worked as it was our first time dinning here. Besides the à la carte menu, there is also a pre-theatre set menu on offer, wine list came on an iPad. While we pondered about what to order, the complimentary house made brioche arrived at our table. Even though the loaf was soft, rich and creamy, we just could not resist the soft and smooth butter that came with it. Flakes of volcanic black salt is also on the table if you should fancy it. The Beef Tartare with heirloom beets, mustard ice cream and puffed wild rice was delicious, the Lamb Rack which came with spring bean cassoulet and black garlic was cooked to perfection. The dessert dish Upside-down Cake served with pineapple curd, white chocolate powder and pineapple sorbet did not disappoint either. My friend was not very impressed with her dessert though, the Honeycrunch which was served with clover honey parfait, ginger biscuit, honeycomb and cinnamon. It was not what she had expected and felt it should have had a bit more honey taste and sweetness to it.

Came for breakfast on a rainy day with sister. Short walk from either central or redfern station for non drivers. First impression: Minimalistic open plan interior you get a great view when you first walk in. Nice and dark interior, great if you're hung over. Great feel and ambience, polite greeting and efficient table service with sociable staff. Menu: Well priced, black coffee is 2.50 and white 3. Creative spin on classic breakfasts. Loads of sides options with the food as well. Coffee: Super fruity short black with a great after taste. Smooth long black. Picollo: delicious, perfect temp, smooth, creamy. Food: Nailed it. The Merchant was spot on. Smashed beans w/ avo👌. Softest bread, fresh and quality ingredients. Flavours went well together, even with sides. This place is going to kill it! Won't be surprised if we have to line up for 40 minutes next time we visit! Good effort!

It's full of suits and meat but what is not to like about the beautifully redecorated former home of Etch that has now been taken over by the juggernaut that is The Meat & Wine Co. If you are a carnivore, it's hard to go wrong. The 350g rib-eye is superb and the half rack of pork ribs is cooked such that meat simply glides off the bone. Any place where you get to wear a bib to dine has got to be okay, right? The wine list is good and is heavy on the Australian side with a nod to some South African wines which is where the company hails from. It's all too easy to sit here an entire afternoon for a long lunch as the staff bring more red, a cheese plate or two and you finish with a nice sticky wine. It's a dangerous business meeting that uses this place as a luncheon location. Well worth a visit but make to take your wallet!

Coffee: Seven Seeds / Reuben Hills / Mecca / Small Batch Passion: 10/10 Crema: 10/10 Having just removed the only 10/10 cafe from my list, I was a little weary giving another one away, but I am finding it exceedingly difficult to fault anything about Paramount. Sure they have only open now for 2 weeks, and the shine will come of eventually, but... wow. Talk about potential for coffee experience. Did you notice that I listed four different roasters? That is because these guys grab a bean, ship it off to the different roasters, and then you get to compare and contrast the different flavours that the roasters can extract from it. AWESOME! Starting with a pour over served cold from Small Batch Roasters of Melbourne and their Colombian El Descanso, I loved being able to sit at the bar are watch the entire process of the coffee being made from start to finish. The experience was clean and precise. The coffee was elegant in its simplistic complexity. Simple as in it is a pour over on ice, and complex as the extraction time, weight, measured delivery of water and controlled cooling with ice. It had a heavy aroma of red delicious apples, and a robust yet mellow body. As a cold coffee, much of the expected tart cranberry was hidden, but the aftertaste was smooth and almost chocolatey. As it warmed back to room temperature, much more of the cranberry appeared and the chocolate turned into peanut as I breathed out. Such an awesome experience. Next up came Mecca with their Colombian El Descartes and it smelled... juicy. Already salivating before drinking I was surprised to not really get a massive whack of anything specific. It was rich, dark, and... requiring a bit more cooling down. As it did, a soft acidity balanced the rich flavour but did leave my tongue feeling dry. All round the experience was much more mellow than the Small Batch. I am so tempted to just sit here and drink their entire menu but should probably leave something to experience next time. But when you come here, and you should, sit at the coffee bar, ask the barista what they recommended and go for that. Sure, they could make you a latte but.... why.... N.B. If you are a beer lover, this is a great place to visit. When I was there they had $5 happy hour pints (which for Sydney is bloody cheap). I have eaten here a couple of times and while normally it is good, the last time was really bad. I am hoping that this is a once off... and that I was just unlucky....

It's clear to me the Sydney Cove Oyster Bar has been working hard in a competitive restaurant market to lift the standard in every facet of their service. The food was excellent, service was great, and the overall atmosphere was terrific. So often you head to the "tourist" area restaurants only to come away disappointed and feeling ripped off however I can only heap praise on the effort they've gone to lift the standard. I only had one issue, we didn't want to leave! Well done Sydney Cove Oyster Bar
