Pilot.

I picked this place because I read the chef had worked at 2 of my favourite Sydney fine diners: regretted Oscillate Wildly, and beloved Ester. I wasn't disappointed. Every single dish had this typically mod-Oz spark, where East meets West, and where sophistication and ease surprisingly but happily coexist. The service was as equally balanced: attentive and professional, yet friendly and relaxed. The icing on the cake (literally) were the desserts: while they are, in my opinion, a bit of a let down in many Australian fine-diners, at Pilot they were as good as the savoury courses. Some of my favourite courses include the deboned, kimchi fried rice filled chicken wing snack and the massaman curry carrots & oxtail. My husband thoroughly enjoyed his wine pairing, with each wine beautifully matching each dish. Nice addition: the background music was awesome: we started with Silverchair, and ended on Nirvana - how cool!

Only thing better than the food and matching drinks (and the non-alcoholic drinks were even more amazing than the alcoholic ones) was the service and personalised care given to everyone attending! Exceptional.

Enjoyable modern Australian food. Daring dishes, most hitting the spot. Good selection of wines, beers and spirits and passionate staff. Nice place for a fancy degustation. We sat outside, however inside is a minimalist environment which adds to a nice ambiance. Would recommend for future. Vegetarian options were great and staff very happy to accommodate.

First time dinning at Pilot, absolutely loved every meal, and the wines. Highly recommend this place for an amazing dinning experience. My guests where very impressed with the service and quality. I can’t wait to try it again, my favorite was the pre desert and the Oxtail. Well done Pilot you exceeded my expectations

We went here for their $60 Sunday set and were not disappointed. The restaurant is small and cosy but not too noisy. The service was excellent and the wait staff were attentive. Food was inventive and on point. Our favourite dish was the mackerel which was just devine! We will be back for another sitting.

We went for dinner on the 13th December 2018. We took our foodie friend who came from the UK. Food: totally delicious from start to finish. We had the tasting menu. The plating was beautiful. Staff: most attentive staff that I have experienced in Canberra!! The details, service and attentiveness is in par with three hatted Australian restaurants. Price: Worth to try the tasting menu. I think it was $90/person Wine selection: Good selection with plenty of local wines.

A solid culinary experience that is engaging and entertaining. Slow down and have a nice time!
