Burrowed deep within the metropolitan cacophony of West End, exclusive invitees of The Chub are graciously admitted via intercom to a marble-lined entry. The experience to come is foreshadowed by your elevated journey before this Stone St establishment’s guests are welcomed personally by its proprietor. A brief introduction and tour quickly reveals a sense of place held within. The seats welcome you to an edifice of flavours housed on a sculpted Australian mangrove board. The night opens with a Westside Mudslide, gently accompanied by an array of Uncle Greg’s delicatessen delights in a considered and soulful display of textural joy. Without hesitation, carefully selected water crackers follow to juxtapose the meaningful tenderness of locally harvested dairy with an unapologetic crunch. Finally, foraged-berry compote rides unrestrained upon an opulent mantle of cheesecake with a fresh biscuit underpinning. This is an establishment founded with significant inspiration; gutsy and defiant in its honesty. The Chub on Stone St is unmissable - the essence of sumptuous dining in Brisbane.

Took a very long time for a reservation, however - it was worth the wait. The most amazing mod Australian served in an intimate setting, get to know the chefs while they prepare your meal in front of you. Great vegan options - Highly recommend.

Wow - never has it been so easy to give a 5 star review! I’ve been trying to get a reservation at The Chub for quite some time and it did not disappoint. Brisbane’s best underground 5 star restaurant! I’d tell you more but it will ruin the surprise. Already thinking of booking now for Christmas!

At this contemporary restaurant perched atop the humming incline of Edmonstone Street, the sophistication starts with a minimalist fit-out of neutrals, floral rugs and modern ambient lighting. Here, the popular one-platter wonder, which is traditionally constructed with humble ingredients such as cheese, fruit and crackers, becomes appetisingly ameliorate. Up levelled. If there was ever a reason to break the rules of your standard Cheesy P, this is it. In place of a beige block of mercy valley is one meticulously crafted heart-shaped Brie, blueberry Wensleydale, one blushed corella pair, together with a glossy puddle of marinated olives and sun-dried tomatoes, hand plucked from the vine. Charcuterie remains courteously separate for dietary considerations with pleats of cured meat draped across themselves, gracefully encircled with a herbed garnish and water crackers. Surprises flow into dessert, where blueberries are carried through to the top of baked cheesecake, aesthetically matched with the paired sour beer. This is a firmly finessed, fine-dining affair. Brisbane boasts a clutch of great eateries, but none quite like The Chub. It’s obvious that the goal of this establishment is to offer a sophisticated take on the funky and nostalgic flavours modern Australian cuisine is best known for. The Chub is a reimagined example of the executive chef’s culinary prowess, showcasing experience and skill, which comes from years of working in the virtual reality space. Creating wonder without limits. Honourable mention to the guest mixologist who kept Irish mudslides flowing seamlessly, covered in porous chocolate garnishes that knocked them out of your common Baileys-on-the-rocks park. It takes an endearing amount of confidence to mess with the mundane, of which this place has achieved artfully. Highly recommend.

The hand crafted cheese platter and matched micro brew sour was delightful. The evening’s entertainment was also tailored to each guests tastes. Such attention to detail!

Exceptional food and company and overall a thoroughly enjoyable experience! My absolute favourite was the cutting edge vege chip and raspberry combo which can be served with or without a burger. My one piece of feedback would be to those with claustrophobia or cleithrophobia, the door handles can be faulty, so enter at your own risk...
