Delicious and all made right on premises. A must visit when in Hobart. The jam doughnut, highly recommended.
All the pastries are very fancy and delicious. The coffee is good too. The best thing is that the bakery is open at 7:30 on Sundays which is handy if you stay in the city center
Went here twice during our stay in Hobart, wish we discovered this place earlier! Always busy but the line moves quickly. Seating is very limited (6 seats). Loved the almond croissants, brioche and the salume sandwich. Batch brew was stunning, but give the espresso coffees a skip.
The first place I ate in Tasmania and I was hooked! Every single baked good was perfection. The jam donut, the breakfast brioche and the palmier were heavenly. I had the brioche multiple times. Good coffee and service too.
Another wonderful experience here in Hobart. We walked past this little Bakery a number of times before finally needing a little fix of donuts. Luckily for us the donuts were all gone so we had to have the white chocolate and apricot cookies with our coffee. Both were fantastic. Won't be walking past anymore. Great little place. Don't walk past, you won't regret it.
A good bakery, coffee was bitter. I hope you have a sweet tooth, the hot cross bun had nice spice with plump fruit if the glaze was a little too sweet but a nice afternoon treat. Unfortunately the coffee wasn’t such a hit, it was rather bitter that no sweetness could disguise.

It is my favourite bakery in the world. Honestly the best pastries & bread ever. The morning buns are perfect. They are always working late into the night when you walk past and the bread and pastries that come out of that kitchen are magic. If you ever get to try their hot cross buns they will destroy you for everywhere else.
Can I give a place 10 stars? Pigeon Whole is amazing. I had a plain croissant which I ate immediately. It fed both my tummy and my soul; it was flakey, light, and well structured all at the same time. In a word, heavenly. I also got a danish to save for later, and after 10 hours of riding around in my backpack, it was still crispy and fresh and devine. The balance of fruit to creme to pastry was exquisite. I've had a lot of pastries in a lot of places and these are an absolute stand out.
